Set smoker at 250 degrees
Remove the membrane rub mustard on them apply seasoning.
Place meat in smoker for 2 hours
Spray apple juice every 30-45min
Remove from smoker, apply honey, butter, and brown sugar rub all over don't be shy with the brown sugar
Place meat side down in foil, spray with apple juice
Wrap with 2 layers of foil
Lower heat to 210 and smoke for 1 hour
Remove rack from smoker and get juices out it of foil, save in bowl
Mix juices with BBQ sauce
Rub BBQ sauce and juice mix over all slabs
Place back in smoker at 250 for 1 hours
